A quick simple lunch!

I’ve been embracing boiling tofu instead of worrying about frying, pan frying, baking, air frying, etc. and it’s been a great improvement to my mental capacity. Just a couple minutes in slightly salted water and then tossed in a quick sauce. So delicious!

Also pictured are some knife cut noodles, broccoli, vegan brown sauce, and some Lao gan ma.
